18 months in French oak barrels
After careful selection for their best condition, the grapes were harvested into 25 kg chests and sent to the winery where they were completely destemmed. Fermentation took place for 9 days in the traditional 7 ton. granitic stone tanks with smooth staggering and pump-overs for blanket leaching and extraction of phenolic and aromatic compounds. At the end of alcoholic fermentation, the wine was transferred to new French oak barrels where malolactic fermentation took place and aged for about 18 months.
